Nacho Pizza

Ingredients

  • 1 pizza crust
  • 1 can refried beans
  • 1 avocado, diced
  • 1-2 roma tomatoes, diced
  • shredded cheddar cheese
  • green onions, chopped

Directions

  1. Preheat oven to 450°F.
  2. While oven is preheating, spread refried beans on top of pre-cooked pizza crust. Sprinkle cheese on top, then add avocado, tomato, and green onions. Top with some more cheese.
  3. Bake for 15 minutes.

Cheeseburger Pizza

Ingredients

  • 1 pizza crust
  • 1 tablespoon olive oil
  • 2 cups meatless crumbles
  • 2 cups cheddar or jack cheese
  • green onions, chopped

Directions

  1. Preheat oven to 450°F.
  2. Heat a large nonstick skillet over medium-high and add meatless crumbles. Cook until heated through, about 10 minutes.
  3. Brush pre-cooked pizza crust with olive oil. Spread 1 cup cheese over entire crust. Top with meatless crumbles, green onions, and the rest of the cheese.
  4. Bake for 10 minutes.

Tomato and Basil Pesto Pizza

Ingredients

  • 1 prebaked pizza crust
  • 2 tablespoons pesto
  • 2 garlic cloves, chopped
  • 1 cup mozzarella cheese
  • 2 large tomatos, chopped
  • 1/4 cup thinly sliced basil

Directions

  1. Preheat oven to 450° F.
  2. Spread pesto evenly over pizza crust. Top with garlic, tomato, and cheese. 
  3. Bake for 5 minutes. Sprinkle with basil and cook for another 8 minutes. Serve.

Spinach and Artichoke Pizza

Servings: 4  Total Time: 30 minutes

Ingredients

  • 1 pizza crust
  • 1 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 2 cups baby spinach
  • 1 can artichoke hearts, quartered
  • 1 garlic clove, minced
  • 1 shallot, sliced
  • 2 tablespoon2 olive oil
  • 1 roma tomato, diced

Directions

  1. Preheat oven to 400ºF.
  2. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Add shallot and cook until softened. Add spinach and cook until wilted.
  3. Spread 1 tablespoon olive oil over pizza crust. Top with cheese, artichokes, garlic, and cooked spinach and shallot.
  4. Bake for 8 to 10 minutes or until cheese is melted.
  5. Remove from oven and top with diced tomato.

Roasted Vegetable Pizza

Servings: 4  –  Total Time: 35 minutes

Ingredients

  • 1 pizza crust
  • 1/3 cup pesto
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons shredded Parmesan cheese
  • 1 red onion, chopped
  • 1 zucchini, chopped
  • 1 cup grape tomates
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon basil

Directions

  1. Preheat oven to 500°F.
  2. Combine onion, zucchini, grape tomatoes, olive oil, salt, and black pepper in a roasting pan. Bake for 18 minutes or until vegetables are tender, stirring after 12 minutes. Add basil to roasted vegetables and toss gently.
  3. Place pizza crust on an ungreased baking sheet.Spread pesto evenly over crust. Top with roasted vegetables  and sprinkle evenly with mozzarella and Parmesan cheeses. Bake at 500°F for 7 minutes or until cheese melts.

Goat Cheese and Mushroom Naan Pizza

Servings: 4  –  Total Time: 30 minutes

Ingredients

  • 2 teaspoons olive oil
  • 1 cup sliced baby portobello mushrooms
  • 2 naan
  • cooking spray
  • 1/4 cup sun-dried tomato pesto
  • 3/4 cup crumbled goat cheese

Directions

  1. Preheat oven to 450°F.
  2. Heat olive oil in a large nonstick skillet over medium-high heat. Add mushrooms and cook for 7 minutes or until lightly browned.
  3. Place naan on a large baking sheet coated with cooking spray. Spread 2 tablespoons pesto over each naan. Sprinkle cooked mushrooms evenly over each naan and top with goat cheese.
  4. Bake for 10 minutes or until cheese softens. Cut each pizza in half.

Single-Serve Margherita Pizza

Servings: 4  –  Total time: 35 minutes

Ingredients

  • 4 pitas
  • 4 roma tomatoes
  • 4 teaspoons olive oil
  • 2 teaspoons minced garlic
  • 8 tablespoons shredded Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Italian seasonings
  • salt
  • basil leaves

Directions

For 1 pizza:

  1. Preheat oven to 425°F.
  2. Slice tomato and place on a paper towel to soak up some of the juice.
  3. Brush 1 teaspoon olive oil over pita bread. Sprinkle pizza with Italian seasonings, 1 tablespoon Parmesan cheese, and 1/4 cup mozzarella cheese. Arrange tomato slices on top, sprinkle with 1 tablespoon Parmesan cheese, 1/4 cup mozzarella cheese, 1/2 teaspoon garlic, and a pinch of salt.
  4. Bake pizza on a baking sheet for 7 minutes. Add fresh basil leaves and bake for another 3 minutes or until cheese starts to brown.
  5. Repeat for remaining pizzas.
