Zucchini Tacos

Servings: 4  –  Total time: 20 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 teaspoon cumin
  • taco-size tortillas
  • shredded cheddar or Mexican cheese blend

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 5-8 minutes.
  2. Add the zucchini, black beans, corn, and  cumin. Cook, stirring occasionally, 8-10 minutes.  Serve in tortillas topped with cheese on top.
